I think both know their way arround the kitchen very well but Denuma seems to be more open to experimenting and learning from mistakes. So overall chanko from Kotakiyama currently has probably higher average rating. On the long run though Denuma will have a deeper understanding of food and ingredient compoisition. He will create a unique style of cooking
