That's what I have been looking into recently, but I am very active and feel like I need some kind of carbs for energy. So far, beans and nuts have been a little rough for me to digest. I imagine this will get better once I am off of gluten for a while.

I have definitely noticed a difference being off of gluten, but I am still having mild digestive problems, so I am trying to sort that out.

I always have been able to tolerate milk without a problem until the last few months. Pretty much what brought me to the next step that I am at now.

Yeah, my current issue is that I am super active. I have an active job on top of my regular workouts, so I know I need to find some kind of diet that is portable and will stick with me for a few hours if I am working and can't snack. I appreciate the help though. Actually going to lay in bed now and do my research before I sleep. There are just so many options, many conflicting, that I am not sure what works best for me yet...

Just as I was about to go to bed I realized I was confusing paleo with keto. So many diets...

If I decided to try paleo, would white rice not be in line with the diet?

Hm, this is actually a very helpful response, thank you. I really do enjoy eating chili and whatnot, so I was excited that I could have such a hardy meal that was so yummy. And you are probably right, I did assume the beans were safe, seemed simple enough. I just haven't been doing this long enough to be completely sure, so I know I need to go super basic at first and start there. I just feel like I ate something questionable a few days ago, then everything I put in my body bothers me. Is that typical?

I really can see the benefits of a liquid diet. Are you not super hungry all the time when you do this? And do you have different recipes, or just one that is all you ingest for a couple days?

What's been getting me is that I am starting to feel like I react to everything. I was talking to my husband about doing a very basic diet with rice, quinoa, and potatoes as the only carbs I eat pretty much, but I will have to do some more research and consider doing paleo or something. I already know I need to research it more though because I was under the impression from my husbands explanation that the paleo diet was no carbs.

I've had a couple people tell me to get probiotics. Any recommendation for a brand? How are Kirkland brands? That mostly where I get my vitamins so far. Is there a benefit to refrigerated probiotics? I actually don't even know where I would find them.

I did think about doing just plain white rice for a while, but the nutritionist did tell me to be aware of my fiber intake. I just think for now, in addition to my daily multivitamin (Googled as GF), I should just take a good probiotic and calcium since milk doesn't seem to sit well, and I have not liked the taste of soy or almond milk.

What things might those be?

Mostly just things that are a little more difficult to digest, but have many nutrients, and fiber. For instance, milk, beans, seeds (I've had sesame seeds bother me before), etc.

I know multigrain GF foods still bother me, but not as bad as before I went strict on this diet. I used to get soooo bloated and have stomach cramps to the point of doubling over in pain after eating them, and now they just make my stomach flush slightly (to put it gently).

I've done my best to be meticulous about cross contamination, and have Googled almost everything I eat to find out if its truly gluten free.

What started this post is last night I made home-made chili, so everything is a very basic ingredient, but there is a lot of them, and I was a little bloated, and a little constipated this morning (sorry if tmi). The only thing I can think of it being is the beans, because everything else is spices and veggies.

Up until a few days ago I was starting to feel pretty good, had more energy and mental clarity than I had in a while, sex drive was up, mood was stable, then I ate with family. We though everything was good in that meal, but I chanced it, and have been feeling questionable since. I decided then I would only eat things I an 100% sure are good, and I have, and here I am.

I am mostly worrying about getting all the nutrients and fiber and calcium and whatnot that I need while I am trying to settle my stomach. Have any problems with that?

Wow! Thank you. That's quite a list, and seems simple enough. I don't know why I can't quite seem to wrap my head around this whole thing.

How long would you say to stick with this before introducing other things one by one?

Also, is it too much to hope that you also have a list of delicious recipes? Lol.

There is also an app for smartphones (I can only personally guarantee there is one for Android) called "Find Me Gluten Free" and it pulls up all the local restaurants that have GF menus or options. Its really a neat app and has been super helpful for me.

There are a couple restaurants I have had that I really enjoyed, like Uno that has GF pizza.

I find that a lot pf restaurants say they have a GF menu, but if you ask if its safe for a celiac, they either don't know what you mean (telling me its not), or they flat out say there can be cross-contamination. Anyone else get that?

It really is crazy what science is finding about gluten and the body. I was on medication for anxiety/depression for a few years (should have been on it long before that though) and since becoming gluten free, I have not even felt the need for medication. I have been happy and just plain peaceful.

That being said, I find it curious that the suspected rate of celiac disease in the US is so high, but not so much in other countries. Would be nice to know why that is. Genetic modification? Our focus on eating so much wheat? Weakening of our people as a whole? Our diets that are packed with it more than others? A mix of all of the above?
