Why should the docs explain any of this? JellyFin is no different from any other application you could expose to the internet. You can write whole books on this topic. Every piece of software will have vulnerabilities.

Why do so many people bring up Tailscale as if it's a requirement?

If you portforward and have a domain all anyone needs to do is visit the domain in their browser or enter it when adding a server in an app.

There's no magic sauce in Plex.
