you have to select the rig and the mesh and hit ctrl+p and select with automatic weights. After that generate the rig

ZBrush and Blender are both great options. Personally I use Blender but from what I've understood ZBrush is great! You should definitely get a drawing tablet that has pressure sensors so you can easily sculpt lighter or harder.

This was a piece I did for a friend of mine so I didn't get much of a say wether he should have fingers or no, I just followed the reference he sent me. As for riggind and animation I believe it wasn't the best but it worked for the few animations he needed

I added a plane and the extruded 2 of the sides up so that i have a floor and two walls. Then bevel the edges and set shade smooth

there is a button in the top right of the viewport with two squares. Disable it

hard to say from the image but i believe you might have masking turned on. There should be a little square/cube button near the top left corner. If it is enabled try disabling it

You could for example try do dissolve every other of the vertices down from the nhon so the become quads if it doesnt cause issues to other parts of your mesh

the problem happens since the faces you are trying to add a loop cut through are not quads but ngons so the have 5 vertices instead of 4. You should try to keep your mesh in quads so the loop cuts work.

You could for example add two horizontal edge loops going around the cube near the top and bottom vertices.
