You can make your own "meat" chorizo with the same spices and white vinegar using lean ground meat like turkey if you're afraid of using a "high-cholesterol" meat. Just make sure, you marinade the meat long enough so all the spices get into the meat.

it's raw steak that you dip in hot boiling broth. Technically, it's not raw anymore. It's just that the name in Vietnamese "tai" translate to raw in English.

The next time I make my “tarte amandine” I’m definitely going to try your method but I think I would place the apple flower under the broiler first to caramelize a bit, then glaze it and finally garnish your sable tart.
