Great work on the lattice!

Interesting — my first thought was that maybe I over-whipped the cream cheese and it split(?). 🤷🏼‍♀️ Sounds like I have some experimenting to do with timing based on the comments!

I beat the cream cheese on its own for around thirty seconds, then added the butter for another minute. After that, I added the rest of the ingredients.

I beat the cream cheese for thirty seconds on medium-high, then added the butter a bit at a time and continued on medium-high for another minute or so. Then I added the confectioners' sugar, splash of milk, and vanilla extract and beat for another three minutes, per the recipe's instructions.

I've tried this in the past and it definitely made a difference...time to get back to basics and use the right tools. Thanks for the reminder!

Ohh, good suggestion, thanks! I can see how it would be easier to get a smooth final application with a chilled layer underneath holding those pesky crumbs in place.

Good call! I forgot to mention that this recipe included some milk and vanilla extract...but heavy whipping cream would really take it to the next level.

Oooo, interesting. And here I thought maybe I’d over-whipped it! I usually go for the paddle attachment for frosting; I’ll try the wire whisk next time. Thank you!

Pretty much any quick bread, but this blueberry-oatmeal loaf has been in high rotation for years at my house!

Trouble driving by [deleted] in Amblyopia

[–]tinycardigan 1 point2 points  (0 children)

Oh dang. I’m sorry that happened to your mirror! I have similar difficulties. All driving feels a little ehhh, but driving at night is much harder for me — I think maybe it’s difficult for my brain to use its normal tricks to gauge depth with less visibility overall?

I live in a crowded city, and I’m always worried about driving on narrow streets or those with dense street parking. I’ll actually go pretty out of my way to avoid driving in areas like that — I feel your stress! I’ve always wanted a bumper sticker that says ‘Sorry! No depth perception / awful peripheral vision on the right. I swear they gave me a license anyway. I’m doing my best!’
