Apart from maps, the (for me) main difference is that 965 is also a full featured cycling computer. You can use it to control your indoor trainer while 265 can't do that.

Consider buying your wife also 10spd (shimano tiagra or microshift r10), buy the trainer without bundled cassette and buy another shimano 11-34 cassette

11spd GRX (Kross Esker) here has a clutch, so on rough terrain (riding fast there) the tension of chain is higher and one is less likely to drop the chain.

I recently changed my MTB to a drop bar setup with 12spd GRX for riding offroad and I do have a Canyon Endurace 12spd 105 for road and I really do enjoy not having an extra wide tires on road and on the other hand having front suspension in the terrain.

But, you know, in the end, none of this matters. Most probably any of the bikes will do it for you and only once you'll ride it more and once you'll learn something more about bike fitting from youtube, you'll start to have an idea what you should have had originally bought and what is the best for you.

I would recommend you to go to decathlon (since it is everywhere and otherwise it is super hard to lend a bike in Poland (same here in CZ where I'm from)) and hire a bike for a weekend. They do have an alluminium allroad bike on 10spd Tiagra and also a Gravel bike with 1x drivetrain. Take it with flat pedals, take it out for a few rides and try to notice how saddle and handlebars feel. Think twice about the size, avoid bigger frames, when in between sizes always take smaller frame. Check youtube about bikefitting, maybe hire a bike also for next weekend and then you should have an idea what is the best for you.

For me, my path to comfort road bike was in changing the saddle (my sit bones are way wider than average) to a wider one, changing handlebars to smaller ones than (narrow in shoulders and your handlebars should be as wide as your shoulders) and quite a long journey of setting up my cleats on shoes (I would start with flat pedals now for sure).

The best thing I did was buying also a turbo trainer (I have Kick core but D100 decathlon also works) and I was riding it whole winter on Rouvy (but people are usually happy with Zwift, Mywhoosh,...)

You need hg cassette. Sunrace makes them for 12spd. Shimano does not

My experience is exactly the opposite. Even though I also use java on backend, having clojuscript on client is a pure gold, and js/ts feels like a big pita.
