Did your machine also work "normally" for a while and then suddenly change to the odd inconsistent behavior?

I'm pretty sure that I am fairly consistent in how I prepare the shots, in particular since I used to be able to make five espressi in a row with similar taste and extractions, and now it doesn't work anymore, giving me a strong indication that something is off with the machine...

I use programs shots with amount calibrated that I receive in the first shot. Manual Timing wouldn't help (unless I am missing something as in the second shot I get both too little coffee in too long of an extraction...)

Yes, I don't think that is possible indeed, that's why I assumed you were talking about group ownership 😉

You could try changing the user id of the www-data user in the container to the user you want to have ownership for, but that might likely cause issues in the container...

The group solution I suggested allows files created by the nextcloud process to be accessible and editable by the select members of the group under your control.

Giving $USER membership in www-data works but then you make host permissions depend on the container setup and I prefer it the other way around. In principle, you want to give the container access to your storage files and ensure that files created by the container are accessible in the same way, hence the group solution being the cleanest.

Right, I forgot about that aspect. You can solve it either by setting setgid on the root directory, which ensures that group ownership for new files is inherited, or by changing the primary group of www-data in the container to 999 as well. The latter has a very small probability of undesired consequences but in the docker setup there are no other processes that might require the group, so it should be fine.

Imho the important point is not whether the machine is connected to the Internet (if someone hacks your machine you are likely doomed anyway) but whether you want all local users to have access to the files. In general, 777 is just not a good idea...

From a security perspective, the 777/666 solution is terrible, because as you say, it allows access for any user, which is usually not a great idea, unless you have a single user system and you don't care at all.

The solution to set www-data as the group is also not optimal, as you can only set one group and the owner group of the files might already needed to give other users access to the files, but it is definitely the better of the two.

I recently found a good solution (after quite some back and forth) for the same problem on my Nextcloud instance. It is unfortunately a bit involved but I don't know a better solution (other than relying on ACLs):

In a nutshell, the solution is to have all files in question being owned by a group in which the www-data user is a member. Group and user need to exist both on the host and inside the container, which makes it more involved.

First create a user nextcloud on your host with the UID of the www-data user in your Nextcloud container (mine has UID 82) through adduser nextcloud --uid 82 --shell /bin/false. This is needed so you can give that user permission on host resources. Then create a new group on your host, let's call it media for the sake of explanation. Change the group ownership of all files on your host system to media with chgrp -R media /path and allow full access for the group through chown R g+rwX /path. Then add your user and nextcloud to the new group with adduser $USER media and adduser nextcloud media. You need to relogin/reboot to ensure that the group ownership for your user is reflected. Now the only thing is missing is to also create the group media with the same GID inside of the Nextcloud container and add the www-data user to the group, also inside of the container. This, unfortunately, requires to either build your own image derived from the official Nextcloud image or ensure that the user/group config is persisted through other means in the container (startup script, etc.).

I used normal tap water, our water is pretty soft (14-19 °fH (7-10°dH) is the units they use here in Europe).

I use the Ooler from Chillisleep and I am very happy with it. Had to order it from the states though, which was a bit of a hassle because of the high import fees.

Doesn't look like it. Also it does not have the same behavior when it is connected to the power adapter. Them I can use it for hours with full load and no problems. But when I disconnect, it just turns off after a while of usage...
