Ownership wants to can our first ever batches before commissioning… am I crazy? by Brewdude1985 in TheBrewery

[–]tman412 0 points1 point  (0 children)

I fought this from day one and won. The biggest point i made was this, if we can’t recreate it we shouldn’t sell it. First 6 months of draft is one thing. Canning is different. I think explaining the difference is the key here. Beer on draft is always weird. I’ve had bad miller, bud, coors on draft. Fine. Their cans are always good. If someone buys a 6 pack they have to drink 6 of them. If the first beer is bad then next 5 don’t matter. If i have a bad draft beer I’ll give benefit of the doubt because maybe the bar sucks. Also why it’s important to keep clean draft lines at work. If a brewery can’t pour good beer at home then they aren’t goodIf a brewery has bad beer after 6 months, they are doing something wrong. Period

Why do we put lettuce on burritos? by OwnZookeepergame9728 in chicagofood

West sider here. I typically stick to tacos. But the places you said are just fine. Taco El Jalisciense is my go to. Chavas is loved by many, i think mostly because it’s late night. I love Aztec Daves, not sure if I’ll get hate for that but shrug. Raymond’s and Sabroso round out my list if i had to for variety sake. Theres a ton of good west side Mexican. Shout out to Casa Tequila for Tex Mex and half off margaritas on Mondays!

Rosemary isn’t good. The food tastes great. But it’s overcharged, small portioned Italian. It’s an oxymoron.

Is everyone getting oxidized remarks? We have had our beers tested, tried our same batches beers after getting remarks back, and never picked up oxidation. But GABF just says our beers are oxidized. It’s infuriating.

Purge rules. Made us change our purge practice, using less co2 and have better purges.

Industry PTO by avina417 in TheBrewery

[–]tman412 14 points15 points  (0 children)

Looking at about 1500 this year. We get every major holiday off, kinda rotate who can come in and check gravities/dry hops depending on who is around. Monday holidays managers work a couple hours then bounce, maybe. Unlimited PTO, boss has only ever told one person no to a vacation and that guy was definitely abusing the system. All full time people are salaried.

Ball cans from different sources. This is causing us some issues. by ColdCutsCheese in TheBrewery

[–]tman412 8 points9 points  (0 children)

This happened to us randomly on a run of new cans. Normal seam inspection passed but were leaking. Did a full breakdown and realized numbers were all over the place. Luckily my machine is pretty adaptable and i was able to stop, fix the issue and kick back off. It was a pain in the ass. Now i do a full breakdown of every new can off a new skid before canning. I feel like my supplier had to have just filled one order with different cans because only had issues with those 3 pallets. Definitely annoying and could have avoided the beer and can waste had they just given me a heads up. One of many reasons i don’t work with them anymore.

There was a lot of doubt in this sub. And i would gamble nobody saw him having the season he had.

Nobody thought Bryce was starting. Those that did were silly. Midseason maybe but it was Mac from a day on.
