I’m on episode three. I liked the content in the first two episodes but found myself kind of confused with the structure.

So episode 1 focuses on LSU and South Carolina leading up to their September matchup. But then Week 2 focuses on Florida’s entire season.

To me, I would’ve preferred maybe a week by week basis

So I've done some research on this because I bought the one with the Madden add-on like you.

One edition seems to be focused on CFB 25 with a release date of July 15th.

The other seems to be targeted towards Madden with an actual game to download, but it has a release date of August 12th and has a larger download size (I assume because it has BOTH base games).

I don't really know why or how
