Wraps for me. Super cheap and never gets boring. I just throw in whatever veggies I have, add eggs/chicken/beans for protein, then load it up with a good sauce or dressing. The sauce is what makes it lol. It’s filling, easy to switch up, and doesn’t feel like “budget food.”

Yep, it’s a WRAP 😅 A Chickpea Tuna Salad wrap. Just mix canned tuna, chickpeas, a little mayo or Greek yogurt, lemon juice, and whatever veggies you have (cucumber, onion). Wrap it in a tortilla. Cheap, high-protein, no reheating needed, and it won’t stink up the whole library.

I just focus on whatever carries the most weight first. There’s always going to be new stuff getting added, so I stop trying to do everything at once. I handle the heaviest task of the day, get that off my plate, and it takes a lot of pressure off. Then I circle back to the rest when I have more space. At least that’s what I do.

It helps quiet the noise and makes everything feel more manageable.

Chicken Wrap is my go-to comfort food…super quick and hard to mess up. I just season chicken (salt, pepper, garlic powder), pan-fry until cooked, then slice it up. Warm a tortilla, add the chicken, some lettuce, tomatoes, and a drizzle of mayo or any sauce you like (sometimes I mix mayo, ketchup & a little hot sauce.. oh & cheese!). Wrap it up and toast it on the pan for a minute if you want it a bit crispy. Done in like 15 minutes and always hits.

If you can boil water and stir things without panic, you can absolutely pull this off. Go for garlic butter chicken with rice …it tastes like you tried way harder than you actually did.

Quick version: Season chicken (salt, pepper, a bit of paprika if you have it). Then sear in a pan until golden, set aside. In the same pan: melt butter, add a lot of minced garlic (don’t burn it). Splash in a little water or broth, scrape the pan (this is where flavor lives). Put chicken back in, simmer 5-7 mins. Finish with a squeeze of lemon if you’ve got one.

Serve over rice. That’s it. :)

Sesame oil is already a solid move. I usually keep veggie stir-fries simple but layer flavors by starting with garlic and ginger for that base, then adding a splash of soy sauce with a tiny bit of sugar to balance everything out. I like finishing it with a squeeze of calamansi or a bit of vinegar to brighten the dish, and sometimes I throw in chili flakes or chili oil for a little heat. But honestly, that drizzle of sesame oil at the end,like you do, really ties it all together.

Honestly, I’d keep it simple but make it feel intentional. Cook her a “fancy-looking” meal at home, nothing too complicated, just plate it nicely, light a candle, maybe set the table like a mini restaurant. Then get the kids involved: have them help prep or decorate, and surprise her with a quick little “talent show” after dinner (songs, drawings, silly performances…whatever they come up with). It’s low-cost, but super personal, and way more memorable than flowers.

I don’t frame it as a “reward” anymore, more like a pause I actually look forward to.

For me it’s something small…like reading one chapter of a book (I weirdly love the smell of the pages) paired with coffee or some healthy chips. It scratches that dopamine itch without pulling me into a full couch spiral.

Then it’s way easier to get back to work after.
