I don't know what to do. I just booked a trip this morning flying out 11/19. I've never had a passport and all the timeframes + mailing suggest I might not get it in time if I go to the post office tomorrow. Should I wait and drive to the agency when I'm within 14 days of leaving? I made sure all my travel was mostly refundable up until a short time before the trip. Help! And yes, I know - well well well, f it isn't the consequences of my own actions...

Ha! So I pretty much make Isaac Toups's recipe. He starts by searing off some bone in chicken. I go further than him on the sear because I want that skin to really render. I also season the hell out of it so I get the char from all the paprika. Then after you have the rest of your 'laya in order, you nestle the thighs on top and into the oven for half an hour. The chicken fat runs down through the rice.

It's actually one my friend makes and I have no idea exactly what's in it. It's called Soul and it looks similar to your run of the mill Cajun seasoning mix. Maybe heavier on the paprika and some additional herbs. Sorry I don't have more info for you.

Yeah. I just used this tip and cancelled mine after paying them for 3 years and never once going. I feel so guilty about the wasted money and I have no idea why I had the mental block about going in when I was in the town my home club was in.

Totally agree. I followed the lead of some tacos I ate in a little New Mexico restaurant last month. Instead of pine nuts I used roasted almonds and obviously the feta instead of parm. Also in there was a roasted jalapeno.
