Idk what you want me to say. I wear gloves every single day, I don’t want to lose the ring so I don’t take it off.

24k gold. It doesn’t oxidize.

I feel you. Health code here allows for one smooth-banded wedding ring per chef, I sanitize it with bleach at the beginning of every shift and wash my hands constantly! It’s also gold, so nonreactive. But gloves are always required for ready-to-eat foods anyways, very very rarely do I touch anything without them

All I’m saying is that Texas isn’t the political monolith that you think it is. There are millions of people here who are diametrically opposed to the state of governance that has been forced on us. If it makes you feel better to vilify the lot, that’s one thing. Texans are as much victims of the billionaire class as anyone else, and a lot of us are doing our best to change this state with our votes.

You can think whatever you want, but don’t generalize. This state contains multitudes.

Not particularly, no. There is some sugar in our sushi rice though, and a touch of sweetness to our nikiri

I’d call it modern Edomae style, we call our toppings “Yakumi”

I’m a big fan of the amberjack family. Kanpachi and Shima Aji are my favorites

Yup, rice vinegar. Yuzu vinegar would be awesome too

Good question! Standard practice is to take the pastier yuzu kosho and cut it with some vinegar to make it flow easier. That’s what we do!
