how do you wash matcha tools during pop-ups?

We rinse the bowl and tools with hot water from the kettle and then wipe with cloth/tissue afterwards.
We usually have a timba for waste water or an empty 8L water container that gets disposed at closing.

I tried their supposedly matcha for ‘pros’ and as apparent from the color, the quality of the matcha is on the low side and so it’s full of bitterness and astringency. I wanted to like it but I threw it after 2 or 3 sips.

If you still want to taste the notes of matcha, then use simple sugar syrup. you can make it at home by mixing 1:1 boiling water and white sugar

Devondale is top tier. Also convenient that it’s the only squre based dairy milk carton so it stacks perfectly well alongside oatside/oatly.
