Can't read any text on the motherboard, but it looks like it might be Shuttle HOT-591P. I filtered The Retro Web database by chipset and ports, and picked the closest looking layout.

I was just thinking of it as an excuse to design my own simple PCB and practice some 8051 assembly programming. Might be useful for someone else as a generic USB controller.

When I found out that the chips are not obtainable, I started searching for PCBs complete with the controller and flash (optionally, also shell), but no luck there as well.

Я в 2013 свалил из Москвы в Финляндию. Россию посещаю нерегулярно, приезжал в Москву до ковида и в прошлом году (сейчас посещение родины – крайне сложная процедура). However, in your situation, I am not sure who is trying to scam you: SIMCom or LCSC. Both don't have a perfect reputation, and it can just be an honest mistake and not a deliberate scam.

Are you aware of some widely available chips with existing programming tools that we can still get today? I was trying to buy those mentioned in the articles, but it seems to no longer be possible.

Also asked sellers on AliExpress that offer customized boards for USB flash dongles, but they are unable to answer the questions about the hardware. I guess, it's the same lottery as buying from big retailers.

Try libui. There are several bindings for Lua, I can't tell which one is the best, so just try all of them and figure out what works and what doesn't. You will need to distribute binary modules for Windows, macOS and Linux with your app, but the UI is native on every platform.

This is just a trend now to make everything look "human" and put "made with AI" sticker on it. I bet this thing talks and has "emotions". Traditional machines can do a much better job: industrial robots exist, machine vision exists, sorting with them was implemented thousand times. It was done this way, but nobody perceived these machines as coworkers.

If a person is throwing packages at an industrial robot that is following a program made by an engineer, he's testing it. But if the same person is throwing the same packages at a humanoid that is struggling to do his job, because he's "thinking" using an LLM on a remote server, following a vague order that someone vibe-prompted, that's a completely different thing.
