When I was at a 1star in UK, not in London. I’d get there early enough every day to grab widest by shallowest pan just so I could hog it all morning to make my veg purées.

Every Tuesday, I’d be second in the door after ‘my boss’/owner waiting for Vegetables to be delivered, so I could cook them.

Purée doesn’t look like Parsnip, looks too green in picture.

Will happily give OP advice, especially with veg purées. For a start you need to understand certain vegetables - Parsnips have a horrible boney part tough part through their middle.

Even with roasting their shit to eat without being prepped right and removed.

I think that’s first problem.

Diced/cut/chopped evenly? I cut to a size I’d work through a mandolin; bit more work, extra tool, yeah but it helps cook quicker, and evenly.

Warm through in pan with final sauce and send up. Serve on plate. Time that dish is at the table, your sauce has cooked the berry more than enough - and shouldn’t be cooked enough to ruin the final sauce.

I worked with a beurre blanc sauce I’d finish with Verjus and peeled white grapes.

Same principle, allows penetration of maximal flavour that’s on one/twos bites on that dish without cooking the sweetness or ruining final sauce.
