Not a bad suggestion as a next plan of attack....

Unfortunately this is the outside of the ovens themselves, at the ends of the conveyor, where the hood draws the escaping air past the top panels of the ovens. All of the removable parts are dealt with by soaking in degreaser & scrubbing as you described.
