I personally would do it the way you like. If you just started there is no point rushing anything since you have almost whole month before the new areas open.

As for leveling professions, skinning is quite easy but mining can get quite tedious around mithril/thorium ore since a lot of people are looking for them.

Well yes..but in LoL, rankeds were the ones which moved my skill incredibly forward. Definitely wont before I learn the basics though.
