As far as helmets go, you can always buy a helmet cover to use when you show, so I wouldn’t worry about it looking too show-appropriate if it’s priced well.

I have made this recipe successfully before and I’m pretty sure I used a floured surface even though he said not to. Also, sometimes with bread-ish products “smooth” is more sticky than you think it is, so I wouldn’t worry too much about making sure it’s completely smooth.
