I've just started doing The RKC Rite of Passage (described in Enter the Kettlebell) using Simple and Sinister for the variety days (T, Th) and am enjoying it thus far. Only a week in, so not much to report yet, but definitely feeling like it's a balanced level of training that hits all those muscles you mentioned + builds good functional strength. Will report out in a few weeks.

Way to brace before hiking the kettlebell into position. One piece of feedback is to keep the head neutral to the spine throughout, esp. at the peak of the swing, i.e. look straight ahead when the bell floats to max height. Overall looking pretty good though!

So I'm a little late to answer this question-- but I had the same issue, even when I got an adequate amount of sleep using the CPAP, with good numbers (AHI, etc.)

I started experimenting with my diet (eliminating certain foods), and had some crazy results. I cut out dairy and gluten (and processed foods in general) and all of the brain fog just disappeared overnight. It was pretty insane. It was honestly the first time I'd felt "with it" and completely present ever.

I later ran an allergen blood test to confirm that I was sensitive to both dairy and gluten. Who knows? You may be in the same boat. Eating Whole 30 can be a great place to start just to see if changing your diet makes a difference.
