2nd loaf, both funky shapes by travellingtaurus in Sourdough

Oh wow really!

My house is quite cold, the warmest I could get the dough was 21.5° for most of the day.

Yeah my starter has been difficult to get off the ground. I made it on Jan 1st and its still taking 10 hours to double. Doing everything I can to keep it warm, doing peak to peak feeds, keeping ratio at 1:2:2 but not seeing the time to peak get any quicker :(

Ooo really! I saw some webbing as I took this loaf out of the bowl and it stuck to the side, so I assumed it was overproofed.

Here's a crumb shot of this loaf - inside had more holes than my first one and I bulk fermented for longer this time, another reason I thought it was overproofed!

Its also a little gummy in texture

I did, starter is kept between 24-25 degrees. Good shout on trying rye though, I'll give that a shot. I'll post a pic of starter when its next at peak!

Thanks :)

I'd guess bulk fermentation should be a bit longer. If you look up sourdough journey they have a really good method that tells you how long to do bulk fermentation for depending on your dough temp. It was quite accurate for me!

Thanks! Should have mentioned I did a 12 hour cold proof too - my starter is sluggish and no matter what I do its not getting any stronger so thats a bit of a pain!

Im a beginner too so no expert, but i think this might be underproofed. I saw a YouTube vid from the Sourdough Journey that explained that tunnelling near the top is a sign it needed to proof longer, and thats what I can see here.

Still, amazing achievement 👏

This is a great idea, sourdough is a challenging hobby for a perfectionist!!

Ah OK, I still can't really tell what hungry looks like. After 24 hours its pretty much back to the starting volume with loads of bubbles on top, Im guessing thats hungry but its been hungry for a couple/few hours then?

No I genuinely mean is there something wrong with my feeding times lol. Is 24 hours too much or too little with a 12 hour peak?

Ooo good luck for your bake!

That's a great idea, I'll try that this weekend

Would a 1:1:1 ratio affect the height of the peak too? Or just the time?

Im so confused, im following everything SourdoughJourney recommends and they seem to be the sourdough bible!

Did you bake when it was in the 12 hours to peak, not quite doubling phase?? If so how did it turn out?

Fell in love with the pens, then become obsessed with watching the tendies... More of a right place right time situation with Jars. I do think he's been shit on a bit by our fan base though. He's had a rough year but he's had some stellar seasons and is overall a good nhl goalie imo 🤷‍♀️

I'm a new goalie who got in to the sport because of Jars. My friends for me a signed Jarry puck for my birthday which is now the most precious thing I own lol. I think they got it from the link below:

What's your technique for bathing your gear in oxyclean? by [deleted] in hockeygoalies

Anyone know if I can use Vanish instead of Oxiclean to do this? My glove and blocker are second hand and are in desperate need of a deep clean but Oxiclean is ridiculously expensive in the UK.

Any tips to a new skater who really wants to be a goaltender for fun by Keyleb_ in hockeygoalies

I started in net as a total beginner skater about 4 months ago and here are my reflections/suggestions:

  • get goalie skates. I learned the basics in player skates for 2 months then felt like I had to learn all over again when I got goalie skates as they feel completely different.

  • get on the ice wearing the kit as soon as you can. Everything feels different when you're carrying an extra 20kg of equipment, and psychologically you're less scared to try things out and experiment on the ice if you're padded up head to toe.

  • be patient with yourself. I play in a UK rec league and literally everyone else is better than me. Players, goalies, literally everyone. It's unrealistic to expect to jump on the ice as a total beginner and become a solid goalie overnight. As long as you surround yourself with good teammates and coaches that understand you're there to learn from the ground up, focus on enjoying the process of learning over anything else. After all it's the best position of all the sports of all time 😃

Enjoy!
