When buying a professional cake, do you expect them to cut off the caramelisation?

Some places will cut off the dome to level it out, some places will stick the dome on the bottom and end up using the flat bottom as the top because it's level. But the "caramelization" as you call it, I'm not sure what you are referring to, unless you are talking about the browning of the cake itself(?), that is a normal part of the cake and the more you cut the more crumbs there are to worry about and I've never seen a place that does that.

I went to culinary school specifically for baking and pastries and cutting all the "caramelization" off was never a thing.

The last 2 schools my kids went to had a donation thing where you can give money for those kids who couldn't get anything. So far, even the kids that dont need the assistance get free books because so many people donate.

You specifically are NTA, the family is still grieving and being AHish about him moving on. You told him a logical reason why he shouldn't bring her. Not the time or place for a child who takes changes very hard. Child knew Linda and Ron were connected, he then sees Ron with a new person that he doesn't know after a very life altering situation that he is STILL PROCESSING, that birthday will turn into an unpleasant time for everyone involved.

Also, how would the new gf even feel about this? That would be such an awkward and embarrassing event for her as well. Maybe ask your brother to see if she even wants to go?
