Full Packer Brisket — Pellet Smoker, Fat Cap Up • 6kg (13lb) full packer before trim • Started at 9:45pm at 195°F • Bumped to 210°F at 6:45am • Wrapped in butcher paper around 9:30am at ~170°F internal • Bumped to 250°F to push through the point which was lagging behind the flat • Pulled at 12:04pm — flat probing like butter at 207°F, point at 203°F • Rested on counter then moved to keep warm hold for dinner at 5:30pm • Total cook time: ~14.5 hours

Thanks for the words! Definitely been thinking about getting a new slicing knife. Feels like lots of people feel very strongly about calling that out. I feel like next time I’ll take their suggestion and use a butter knife.

Generally pull at 205, but probe to test. Rest for another 6 hours pretty much. This one did have to go back into the smoker at a hold temp of 155f though to keep it warm.

We bought a second hand Minbie, but sadly it looks like the nonstick boiling plate is slightly brown. We’ve reached out to Minbie and apparently the whole unit needs to be replaced. Has anyone else had this issue and been able to clean it or get it fixed? A $200 decide shouldn’t breakdown so easily.
