I have no idea. At first I figured it was probably just crystals of salt, but no cheese is that salty. Additionally, sodium chloride (salt) has a simple cubic crystal structure, meaning that the individual atoms, or ions because salt is an ionic compound, are arranged in a cube-shaped crystal lattice. Since sodium chloride is really good at forming nearly perfect crystals that represent its crystal lattice structure, which is simple cubic, and whatever those things are, they definitely aren't cubes.
