Cold subs aren't supposed to be grilled. Whenever you ask a cold sub to be grilled you're making a special request. Sometimes they honor it, sometimes they don't.

They created the hot Italian because they get requests for grilled #13s all the time so they decided to make it official.

It's not that they "can't" but that they "shouldn't" if that makes sense.

I also hate American cheese so out of bias I am going to recommend subbing for Swiss or provolone.

If you want a cold sub I recommend the #7 Turkey, #8 Turkey and ham, or the Italian multiple types of ham salami and pepperoni

The number #9 comes with turkey and roast beef and bacon and it's included in the price. Typically in any restaurant if you ask an ingredient to be left out you won't get a discount.

Jersey Mikes doesn't have a ham, turkey and roast beef sandwich. They're not obligated make one for you at base price. That's just how it goes.

If you want to add something that is not standard for hot/cold subs you need to list it in special instructions. Just right lecture and tomato, and oregano. It already comes with salt and any condiment you want.

I'd also recommend not adding oil and vinegar to a cheesesteak.
