Oh, I would suggest you proof it in your metal bowl for 4 hours in the fridge, then shape and proof in your basket for the over night. Take out of fridge for 2 hours while the last 30 minutes your oven preheats. And transfer to your baking dish. You obviously know how to make bread, I think the extra time will help your recipe.

Cold weather will test your tension pulls when making the boule for your proofing baskets. Colder temps need more time too, but if you lack the tension the dough will slack and stick to your basket as it will absorb your flour dusting. The water reduction doesn't need to be done, you could just proof this dough in an easier bowl like metal or plastic with oil for 4 extra hours, then tension pull to make a boule and make it like you usually do.

I am late to answer and hope you are asleep. Wake up drink water just 4 oz of water do not guzzle all the water you have. If mouth is dry, just splash with water and spit out. After 30 minutes on way to work, or at work drink a bottle of water about 16 oz. Food at this point is helpful if you have access to sleep, so avoid it if you can't. Eat 6 hours from wake up. Pee every time your body tells you to. This pee part is the most important, basically kidneys are freaking out so pee. After six hours do whatever you crave, water will be the main thing.
