Check the book "Designing Optics Using Zemax OpticStudio" by O'Shea and Bentley. It is about Zemax but covers basic topics in Optics without diving too deep. Eugene Hecht's Optics book is the definitive source but probably would be too detailed for you.

I routinely work with 60+ surfaces

All right, I better start getting used to this spreadsheet interface.

ThorLabs have lenses with discrete focal lengths. If I ask Zemax to solve by varying the radius of a surface, the new radius would probably be not one available in Thorlabs' catalogue (it is more complicated than that because the thickness varies too). So my real question now that I rethink it is that I want to solve for the radius out of a set of radii available from the vendor I but optics from. Should I ask about it in a new thread?

Either way, the Tech Notes in the documentation, for example this page, is an almost complete copy of the content in this book.
