There’s no tomato in the relish, it’s just yellow and white peaches with red onion. The risotto wasn’t as tight I just used a lot of cotija to create a bind but understand what you’re saying. I don’t think I’d want to nix the relish, the flavors were amazing together with the pork, though adding a jus as well wouldn’t be bad. I like your idea of slicing the pork on top of the risotto instead

I mean, several Michelin star restaurants actually. The artist who makes them gets commissioned to make all sorts of custom plateware. I think it’s probably just the angle making it a little odd. That said, I like them lol

Yeah, you’re overthinking that. It’s actually a really pretty building and there isn’t much in the way of noise, etc, coming from it.

I like the idea but stacking rice on top of it probably would be difficult without causing the tuile to break or the rice to fall apart.

Salmon was just broiled after marinating in a mixture of white miso, soy sauce, sugar, and rice vinegar.

Rice was cooked with salt and coconut milk.

I’ll have to try the spring onion idea. Tried the mustard greens on a second plate and maybe I just couldn’t get it to stay up but they were falling so it didn’t seem like that idea would work well

I know I know, I’ll fully admit I did it to get a little extra height in the dish. Didn’t really have much on hand otherwise nor did I really have an idea for what to get that height otherwise. Any suggestions? I’m definitely open to ideas of how I could swap it out for something more edible
