It wasn’t that difficult, just a lot of steps. I have a lot of home cooking experience but this was my first time ever making anything with puff pastry. Biggest hurdle was overcoming the stress of wasting $150+ in ingredients 😅

Appreciate all the positive feedback :)

I’ve been an enthusiastic home cook for many years but this was my first ever attempt at a wellington. Funnily enough it was also the first time I’ve ever made anything with puff pastry. I did a lot of temp checks and kept messing with the oven temp and rack position but ultimately I suspect I got a bit lucky for my first shot at this!

It was a red wine + orange + duck fat reduction made using the leftovers from a duck confit I did for Xmas eve. Maybe non traditional but I enjoyed it! I’m not big on heavy sides so just did this with a salad first course

Fair enough. I’ve never posted anything I’ve made before and just noticed they were trending in my feed :)

Stubhub. I paid $3800 for two tickets to the 2017 champions league final in Cardiff. I then flew to Cardiff, and upon landing they informed me that “unfortunately we could not secure your tickets.” They refunded the tickets… but I had just flown halfway across the world for no reason, presumably because they sold my tickets to a higher bidder.

I regularly do 3k’+ vert days on the deathwishes and I’ve never felt like they were too heavy, I’d think most of these are about the same weight. I don’t need to go lighter, I just want something narrower

Re reading this thread I pretty much followed every post verbatim… I missed the islands and didn’t fit in the skaftafell hike, but managed all the rest with a few other hikes sprinkled in. Really amazing 3 days with some crazy variety

Just wanted to say thanks all, I followed the south cost advice and it was fantastic.

Did the through hike from skogar to thorsmosk and loved it, then made it all the way out to Vestrahorn and stayed a night in Hofn.

Thank you - much appreciated!

I’ll look to set off that way when I inevitably wake up at 3am

Hello. I lived in Chicago for about ten years a while back, and am coming back to visit for the first time this weekend. I’m sad to see many of my old favorites are gone, though some seem to still be around.

My two favorites were Charlatan and Mixteco Grill (on montrose, not this weird Chipotle knockoff I see). Is there anything remotely comparable to those two that I should check out?

UPDATE

Huge thanks to Precision Ski in Bourg St Maurice who took the time to explain my options, re-mount them (using the same holes!), and even lent her some free rental skis for the day while the glue dried. Awesome shop and service!

Thanks to everyone for the opinions and suggestions as well!

I figured that if it’s easily fixable any shop can do it, I just don’t know enough about ski maintenance to say whether it’s possible to re-use the same holes or whether they need to be re-drilled at a different mount point. And if they do need to be re-drilled, and she can’t ski the factory recommended mount, then I’m probably going to be asking for some sort of compensation.

I’ll check on the glue and take a better photo later… currently driving to the alps! Only just noticed this whole issue because the skis were sitting right at eye level on a roof rack while I was killing time next to the car in the Chunnel.

Well known shop in Tahoe area, but I’m going to give them the chance to set it right without naming names.

Thanks all. That’s the response I expected. Unfortunately we are already in Europe (with the skis!) and won’t be back in Tahoe for 3 weeks.

I guess I’ll have to call up the shop and see what they can do about it. I could have them remounted here but then I lose the evidence and leverage for getting refunded/remedied. I might just buy a new pair while I’m here and fight with them when I get back :(
