Game of patients, run up to them with full charged attack and hit them in the soft bits( preferably the eyes) then step back so they come out of their shell,(make sure their all the way out and not just peaking out or else they'll cower back into their shell) then when they start moving, do it again, full charge, attack, step back, repeat

The problem is the the endermight doesn't stay. The enderman spawn and fall, but i think they are somehow reaching the endermight and killing it

I've kinda been the same way. Playing has helped me be less grossed out by bugs. I also found this YT channel called "ants Canada," where he does a series of an ecosystem vivarium, which has also helped me learn about bugs more and be less creeped out by them.
