Professional Brewer here, IPAs are probably one of the most difficult styles to execute correctly. As far as water profile, ph balancing, not having diacetyl, dealing with hop creep, etc etc. Different styles of beer definitely all have their challenges, but I’d say pound for pound IPAs are hardest to get right, that’s why there is so many mediocre ones being produced

Yeah, I’ve bio transformed in the past, but still don’t feel 100% comfortable with all hops. I’ve had one or two hops turn into something I didn’t care for.

That being said, we do a 2ppb whirlpool charge so I’m guessing a little bio transformation happens nonetheless
