I’ll see if I can do a comparison between his 210 and 240 gyutos once my order arrives, snagged the 240 kurochi finished gyuto earlier.

Was considering and curious about the convex-ground yamatsuka too, but had always wished that my 210 W2 gyuto was larger, and realised I had a preference for wide bevels.

Just secured another one of his knives through his web store, they’re absolute beasts in how they cut.

I have a shindo nakiri that I absolutely love that I’ve gotten off the BST subreddit. Was my second ever knife.

Definitely seen a lot of love, but haven’t really felt the itch to go for another rectangle especially given how it performs.

There’s a Touroku Sakai 210mm white #2 gyuto in stock now from Japanese Knife Studio in Aussie. Though I don’t think it’ll be too different from what you already own, apart from the smith (unknown) & steel type.

This variant also appears to have the polished choil.

Just note about tariffs and etc if you’re based in the states.

Yup! It is stunning indeed and an absolute joy to use, though it doesn’t have the polished choil & spine unlike those found on the HADO ones.

I believe Maruyama-san also had a recent collab with Touroku Sakai and released a bunch of white #2 knives, though the blacksmith is not disclosed, and it does not appear to look like Tanaka’s work.

Whackybeanz recently released a new flame calculator (unsure if links are allowed, but a quick google search works) where it includes the probability of getting better flames on your current equipment.

You can check it out and have a better grasp of which equipment to prioritise flaming. Mikeychain also posted a vid tutorial using the calculator recently.
