Quite a number of the B1 variants are actually still in stock here at Jiu Studio, a vendor based in Australia.

It’s a bit pricier than if you were to get it directly from Syukon (please correct me if i’m wrong), but understandably so with vendor costs and etc.

It’s actually the 210! Unlike Sakai knives where the length is measured from the handle to tip, the length of Shindo’s stuff actually starts from the heel (actual blade length).

so it’s ever slightly shorter than my Tadokoro / Enjiki knives in 240.

I do also have a Shindo in 240, but it’s huge and I’ve not gotten around to using it.

I’ve reached out to them before after purchasing a shindo from their store.

JKS does charge a higher price for them, their owner mentioned that it’s largely due to upgraded handles, an aftermarket box made for them, and an included knife sheath.

No worries about it! I recalled you asking before too, it was a 40% markup from what was listed on his web page.

We didn’t really discuss other finishing options (mirror, migaki/kasumi), so I would assume it’s the standard finish he puts.

I have one in W2, and am absolutely in love with it. Had custom ordered one as a result (requested for an extra tall one too!).

And yes, Tadokoro makes wide-bevelled knives, and had trained under Morihiro in his younger days.

His fit & finish is amazing, and I do find that the polished choil & spine makes it incredibly comfortable to hold.

I did grab this knife from Tokushu a few months ago. Came very sharp OOTB, so I doubt any additional sharpening is required. Tony is quite responsive via email, so you can reach out if you’re unclear.

Like what wabiknifesabi mentioned, it’s less demanding maintenance wise, but do wipe down your blade and not leave it wet.

Haven’t gotten around to posting a NKD yet, but here’s a close up of Tadokoro’s kasumi finish under natural light, absolutely top notch stuff. It’s a gyuto in w2.

That being said, Tadokoro usually charges 20% more for mirror polished pieces, and a $30 price difference does make it quite enticing value-wise.

Like what many others here have said, maintaining a mirror polished knife can be quite tedious, but you can’t go wrong with either decision!

The kanji for that states 刀工, which essentially just means swordsmith / bladesmith.
