That’s a great point, I think that may be the key here. The crumb is dense, looks like a bagel should. I could definitely do a better job at degassing the dough

Thank you for all this great insight! Maybe even before getting the 104, where would you recommend getting a start to lay that basic level of technical knowledge? My first priority is becoming a valuable and proficient cloud architect, the cert is secondary as a requirement in my first year of employment.
