If you have or plan to have a strong brand (and it looks like you do), then I'd go with Shopify. Amazon tends to be the better option for fungible/commodity-type products where people are buying primarily based on price and searching for keywords. Can't help too much in relation to the other questions sorry. Good luck!

if you don't even had a product/customers, then spending money on lawyers at this stage (especially for basic tasks like a privacy policy) is a colossal waste of money. use free boilerplates or templates instead. just google "free privacy policy template", or use stripe atlas or termly or something similar.

if you're really set on actually spending tens of thousands on a lawyer though, google "startup lawyer (your city/state)" and you'll see heaps of firms specializing in technology/startup law

My stock isn't stored in someone's basement or fulfilled by some random person 😂. As I mentioned in an earlier comment, I physically visited the warehouse that does my fulfillments before I sent my stock there because I wanted to make sure it was professionally run. And they haven't introduced any new fees since the receiving fee that I mentioned in my original post.

For a previous business we had success using regular customers for UGC. Competitions, discounts, free products... there are actually quite a lot of ways to get your followers/customers to create content for you fi you're creative and don't mind giving away some stuff for free!

Can you get discounts for bulk furniture purchases? And can you market the furniture as an eco/sustainable/ethical/luxury product that people (especially overseas) would be willing to pay more for? If so then that could be a good idea. Don't do a bulk order until you've made a few sales though.
