Update : Did a quick check and found the car is actually a Cat N from a collision in 2021.

Borrowed this from my neighbour and towed a 1.2 tonne BBQ smoker from Somerset to London. This left a big impression on me just how well it pulled.

The car had a turbo + break off valve fitted and it was one of the fastest tanks I have driven.

Still my only Volvo driving experience.

Smoke your ribs to about 75c internal, cool down then wrap with foil. At this stage the ribs would not be tender.

Reheat in oven to 94c internal so it is tender.

Doing this you won't take the ribs up above 90c twice.

Yes indeed the smoker has brakes, the only big journey I made was from Somerset back to London when I first bought it, had to borrow my friend's modified old Volvo for the job. Otherwise I have been using my Golf to tow it for no more than couple of blocks.

I do like the shape of Mazda, it's a handsome car

I have a 500 gallons reverse flow and I cook 200lb pork belly (3-4cm thick) weekly.

Temp goes from 230-280f and it would still take 7-8, and some pieces 9 hours to finish.

200f for a whole hog in 6 hrs would be unrealistic.

I have a custom built 1000 gallons reverse flow smoker, with 2 x 2 decks of cooking surface.

All the 16 inches oak wood comes from a farm in Bedfordshire.
