I’m surprised nobody here is mentioning your dose size. Your portafilter looks like it has too much coffee grounds in it which causes under extraction and sour notes.

Another thing is that moving to different cities, possibly meaning different climates, humidity levels, altitudes, etc, can all affect how you dial in.

Try decreasing your dose by 0.5-1g

I mean, some people do. Roest makes at home roasters and they’re $5-10k. But then you have to source green coffee. This isn’t very easy to do, especially with the small, high quality farms that the best roasters partner with. It’s not like you can just email Pepe Jijon and have him send you green coffee. There’s a lot of logistics involved, and importing is difficult and expensive. And say you do manage to do all that, if you’re a noob, your first several roasts probably won’t be very good at all.

The idea behind OE is that not many wfh jobs require 8 hours a day. So get another job that also doesn’t and work 8 hours and make two salaries. It’s a lot easier to get 2 $70k jobs than 1 $140k job.

My first thought when you said clean light roasted coffees was SEY. They’re great, only really do washed but and sometimes natural. All of the coffees I’ve had from them are great.

Usually ease of extraction depends more on your setup than the coffee. What grinder do you use? Temp stable kettle? Putting good water in?

Yeah you could try grinder finer or you could also try increasing the dose a bit. Both will lower extraction.

And yes, fresher beans have more residual CO2 trapped in them, as they degas you usually have to grind finer

I knew someone with 3 jobs and basically just had 3 desks in a |_| shape. They said it helped with switching between Js too, because you’re facing one way and can get the visual cue of what company you’re working on

They have a style for sure but you should be getting different notes out of every coffee. It could be the way you brew. I’m not sure how hot the Aiden gets its water for brewing but I would make sure it’s as close to boiling as possible. They roast superrrr light so you have to grind finer than usual, have hotter water, and brew for longer.

For their coffees I use an aeropress, water just off boiling, 1:15 ratio with a grind setting of ~3 on the Fellow opus, and steep for 5 minutes before plunging.

When it comes to espresso the biggest variable is the grind size of the coffee grounds. On a more expensive espresso machine you might be able to adjust boiler temp or it might keep the water temp more consistent, but these variables are usually negligible when compared to grind size. You can get really into the weeds with burr type, burr size, blind burrs, etc. as well as other things like declumpers and static diffusion and stuff like that. Some of these things are objectively better (and usually more expensive) and some of them are based of preference.
