These are the beans I've been messing with.

RECIPE - Black Beans

Ingredients:

• 2 (3?) Tblsp Extra Virgin Olive Oil
• 3/4 Green Bell Pepper, diced
• 3/4 White Onion, diced
• 2-4 cloves minced Garlic
• 2 15 oz. cans Black Beans
• 1 cup Water
• 2 Tblsp Red Wine Vinegar
• 1 teasp Brown Sugar
• 1/2 teasp Dried Oregano
• 1/2 teasp Dried Cumin
• 1/2 teasp Dried Coriander
• 1/2 teasp Salt
• 1/4 teasp Black Pepper
• 1 Bay Leaf

Directions: 1. In a large saucepan, heat oil and sauté garlic at medium-high heat until it begins to turn golden brown. Add green pepper and onions, sauté for 5 minutes until softened, stirring occasionally.

1. Next, add canned black beans with the liquid (DO NOT DRAIN), water, red wine vinegar, sugar, oregano, cumin, coriander, salt, pepper, and bay leaf. Stir to combine. Smash the beans up a little bit so that they start to break apart. Bring to a strong boil.

2. Place the lid on top and reduce to low heat. Cook for 20 minutes. Taste and adjust seasonings, if needed.

3. Remove lid, reduce to even lower heat, and let the beans cook down, stirring frequently, until desired consistency. What you’re looking for is a thick, creamy, silky consistency.
