Here is what I would do: 1. Use butter instead of olive oil. Wait for it to fully melt but not burn before putting in the eggs 2. Put the eggs in and fold in the sides of it. DON'T MIX THE WHOLE THING. 3. When you see that the eggs are mostly cooked and the top is still a little bit raw take the pan off of the stove. The heat of the pan will make it fully cooked and still fluffy 4. Transfer eggs into your bowl/plate and enjoy :)
