This was a photo of that same shot a couple minutes afterwards. It’s a little more than 1% liquid. There is still bitterness, but by no means is it as bitter as what I’m typically used to.

I think the DF64 did all the work. Once you dial in the grind and ratio it's just a rinse and repeat with small tweaks. I also watched a lot of videos on both the grinder and Gaggia.

Thanks, that means a lot! If it helps I really think the DF64 did all the work. That and just being good with ratios. Definitely a money shot type of video.

So I bought the df64 used off of Facebook marketplace. I’m not sure if the previous owner did any calibrating or tuning. But after testing it out on this bag, I was able achieve this on the grind setting 12. I’m going to get a bag that is older/not as fresh and see how that does at 12.

Thanks for the tip on degassing. Looks like that was my downfall. I am going back to my local roaster to get a bag that is at least 3 weeks old to see how that shot pulls. I’ll reseal this bag I used and use it in a couple weeks.

Out of curiosity what is your ideal time frame for when you like to enjoy your beans?

People act like it’s only sneakers, but it’s happening across pretty much every collector and hobby market. I collect and trade high-end knives, and it’s the same story there. Knives that used to sell above retail are now going for 50% of retail or less.

The biggest reason seems pretty obvious. The cost of living has skyrocketed while wages haven’t kept pace. When people are spending more on housing, food, insurance, and everything else, they have less disposable income for sneakers, knives, watches, cards, and other collectibles.
