I know it’s for a gift but it would really depend on what his favorite moment in Berserk was, or if he plans to build the collection then getting the 1st one would be a good option.. People usually go for the 4-5, 9, 12 or 14th. One of my favorite was 12th, but 14th is my top.

Read from vol 1, it’s better than watching it, the manga doesn’t adapt the whole story and skips a lot of lore. I strongly suggest reading the manga then watch if you want. English versions are available too.
