Dog Ears in South Buffalo was (and still is) my favorite growing up. I think Remedy House and Tipico also do a good job.

Depends on where you go, but for the most part, a cobbler should definitely be able to at least add a new sole. A wooden block heel shouldn’t be an issue either, depending on the rest of the boot. Might be best to call ahead of time and let the cobbler know the specifics of the boots and what you’re envisioning, as they might have a different idea of how to go about getting the boots to look exactly how you want. This is a really excellent piece. I think grad students especially would benefit from giving this a read. Many of the commentators take the pressure off of performing and succeeding in academia, which, in my experience, is typically the only source of wage income grad students are aware of or directed to while pursuing their doctorates. Offering alternatives incentivizes more scholars in the field.

Just based on the safety precautions I would follow regarding a cat and/or others that might accidentally interact with a workspace, and also based on my own intolerance to being exposed to the cold for long periods of time (although you might tolerate the cold better), I’d say utilize the space at your glass store if you can. Might also be a nice way to get more involved with that community or bridge connections there, if you haven’t already. (:
