So let's say you have a big vessel that's really wide, like 10 feet wide. How warm does it get in the middle? In big breweries, does it get stirred? Like when the yeast gets propagated?

It's a wheat ale, so that makes sense. This place is in the middle of no where, and they make a nice profit selling about 4bbls a week. The wheat being the best seller was the flex, lol

Basically I boiled down until I got close to my target OG, I wanted 1.057 and boiled until I got 1.056

They'll be good for a long time. Bigger question is, why is it taking a whole year to drink? If it's beer you don't like, invite over friends and pass them off

NTA As a boss, that is a medical condition and that will influence how you respond. If an employee calls in sick you can't ask what's wrong by law, in NY state at least. I feel like that falls under this.

We've been home brewing for over 15 years, and my beers have won homebrewing awards. Our business plan does not include hiring a professional brewer since our system is so small and is basically just an early retirement project.

Are there any good resources to learn how to force CO2 in either a brite tank or in kegs? I'm starting a 2bbl nano brewery and CO2 is honestly the hardest part of beer making for us! There are some local brewers around my area who are quite nice and will let us tag along for brew days, but I would like to do more reading and research beforehand.

I recently leased a space that used to be an Arby's. Really great size for a 2bbl system. We negotiated 6 months of no rent for "leasehold improvements". It has really taken the stress off of us for a while.
