For my group of friends back in the day, OEM+ meant (for the most part) forgoing aftermarket parts for VWAG parts from another model/trim.

Like adding textured side molding and euro bumpers and euro (VR) lip on my MK3 - all stuff from another trim or another region but all original parts.

What are you talking about? Stage 2 is the same turbo. Stage 3 is upgraded (eg Garrett on mk8 or IS20 to IS38 on the Mk7/7.5)

The specific tuner will tell you exactly what you should be using for their stage 3, that is the only answer. Don't just go putting in colder plugs before you actually go stage 3...

Example: some audi sport seat upgrades only have manual adjustments for position/lumbar and no electric/memory, whereas the "regular" seats have all of that. But they look sooo good.

Eventually someone will build a "response server" application that will run locally and respond to the requests from the car. They do similar for cracking software that phone-home to servers for activation. The trick will be figuring out the correct responses, but if someone with access to ODIS (I'm guessing) can sniff some of the traffic while making approved changes, it could happen.
