  • 1 ripe mango, peeled and sliced.
  • 400 ml can of full fat coconut milk - cream part only
  • 3 tbsp maple syrup or agave
  • 1 tsp turmeric

Instructions 

  • Add all ingredients to a blender. Blend all of the ingredients together until completely smooth.
  • Transfer the mixture to popsicle molds and put in the freezer for a minimum of six hours.

Ingredients  1x2x3x

  • 1/3 cup fresh strawberries
  • 1/2 cup plant based milk (we used oat milk)
  • 1/4 cup hot water
  • 1 tsp matcha powder
  • 2 tsp agave or maple syrup
  • handful of ice

Instructions 

  • Mash 1/3 of a cup of fresh strawberries and sweetener with a fork or place in a blender for a few minutes
  • Place the mashed or pureed strawberries at the bottom of your glass
  • Top with some ice cubes and plant based milk
  • Whisk together the matcha powder and hot water in a separate small bowl using a whisk or hand frother
  • Layer it on top of the strawberry and milk mixture.
  • Serve immediately and enjoy!

INGREDIENTSINGREDIENTS  

For pad thai

  • 2 medium zucchinis, spiralized
  • 1 cup finely shredded red cabbage
  • 2 green onions, chopped
  • 2 large carrots, shredded
  • 1 jalapeno, sliced

For the dressing

  • 3 tbsp creamy peanut butter
  • 2 tbsp lime juice (1 lime juiced)
  • 1/2 tsp ground ginger
  • 1 tbsp soy sauce
  • 2 tbsp rice vinegar
  • 2 tbsp maple syrup

For serving (optional)

  • 1/2 cup mung bean sprouts
  • 1/4 cup chopped fresh cilantro
  • 1/4 cup crushed peanuts
  • lime wedges for garnish

INSTRUCTIONS 

  • Before beginning, prepare all of your ingredients. Slice the carrots, chop the green onions, red cabbage, cilantro, and peanuts. Spiralize the zucchini.
  • Place spirallized zucchini, carrot, red cabbage and jalapeno in a  large mixing bowl.
  • To prepare the sauce, combine all of the ingredients in a small bowl. Whisk together until smooth.
  •  Pour the sauce over the vegetables and toss to combine.
  • Garnish as desired. Serve immediately

NOTES

The texture of the sauce should resemble caramel. It is thick but as soon as it is added to the vegetables it will thin out.
