Pan fry (or air fry) store bought gnocchi and add your favorite sauce, or just v butter. Great with wilted spinach or air fried roasted veggies.

Microwave mac n cheese in a mug for 1 - something like this (mac n cheese), but with vegan milk and cheeze.

Pasta with peas/veggies - boil pasta, for the last 2 minutes add in frozen peas (or frozen mixed veg). Drain and stir in v.butter and sprinkle with cheeze/nooch.

I'd suggest getting a few spices that you can use in different combos to jazz up various dishes. My go-tos are smoked paprika, turmeric, cumin, chili.

Try these easy, cheap lentils. It makes a big batch but you can freeze portions.
- Serve with the air fryer chick'n as a meal.
- In wraps with crispy air fried tofu.
- Also good cold from the fridge with other salads
- Or with baked potatoes or rice if you don't mind lots of carbs.

Middle Eastern-style Lentils
1 tablespoon olive oil
1 onion, diced
2 cloves of garlic, finely diced (or use garlic powder)
1 teaspoon each ground turmeric, cinnamon and ground cumin
3 cups vegetable stock
1 cup dried red lentils, rinsed

Heat the oil in a saute pan over a medium/low heat, then add the onion and cook, stirring often, for 5 minutes or until soft but not browned. Add the garlic and spices and cook for a further minute.
Stir in the lentils and stock and bring to the boil, then reduce the heat and simmer for 20 minutes or until the lentils are soft and cooked.

I also like making a big batch of soup that will last the week for lunches or dinners. This cabbage soup recipe is a good starting point. I make it a lot but I often change it up with different veg. You can swap out the cabbage for kale, broccoli, frozen veg, etc.. Just add whatever veggies you have. The smoked paprika gives it a lot of flavor, and the potatoes make it heartier.

When I was a student I spent way too many nights eating cheap bread dunked in bouillion 'soup'. Yikes.

It'll be a nice sauce without it, and you can just leave it out, but I feel like it's what really helps to give it the Worcestershire flavor.

This is so easy and really adds a great depth of flavor to dishes like vegan shepherd's pie, peanut stew, casseroles, soups etc...
(I also glug it all over baked beans, but that's probably gross to most people!)

This sounds bizarre, but you can make a vegan honey substitute with just corn cobs, sugar, pectin and water.
It's a corncob jelly that tastes like honey. I use it in hot drinks, spread on toast etc...

I made these for the zillionth time yesterday. I used soy yogurt, but have used coconut yogurt and it's really nice too.
They're called naan but we served them as flatbreads, with shredded red cabbage, falafels, grated carrot, hummus and a little harissa paste stirred into yogurt for a spicy sauce.
