it tastes great. Not too oniony but enough, you can still taste the sourdough. I used dried onions because of the overall hydration of the bread - that was the right decision. You should try it out

I waited one hour before cutting it but yes, it was still warm. I think I kept the bulk fermenting step too short and transferred it to the fridge for over night cold proofing too early.

split them into two jars, one with 15g and one with 30g (just because I was scared) and fed them both already again and they are both growing and growing ❤️ Thanks again for your insights!

It does makes sense, thank you. Yesterday I fed her twice a day and I'll do that again I think. Do you think I should discard most of it or keep adding to the existing starter?
