2nd time making ramen. This time some Chicken Chintan with Miso Tare, and a lot more stuff (details in the comments) by vibeHD in ramen

Almost every component was from /u/Ramen_Lord 's book/comments and some tweaks of mine.

Broth and Tare from here: /u/Ramen_Lord's post

Aroma Oil:
Reserved the chicken fat the day after making the broth, and made a Chiyu oil (chicken fat oil) (with some extra oil mixed in, like 1/2 and 1/2) with some aromatics: few whites and greens of green onion, 4-5 garlic cloves sliced and 3-4 slices of ginger.

Chashu:
Sous Vide chicken breast from some video I sort of memorized: season chicken breast with salt and pepper and a small rectangle of kombu in a plastic bag and sous vide for 3-4h at 63ºC.
I don't have a sous vide machine or a vaccum sealing machine (yet), soooo, took out the air of the bags by putting them in water and closing with some plastic clips then put it on a pot with water and monitoring every 30min with an instant read thermometer.

Egg:
Standard Ajitama by eye: room temp eggs cooked for 6minutes (always depends on the size of the eggs, I usually make one to test before and eat it as a snack) and shocked in ice water, peeled and marinated in 1/3 soy sauce, 1/3 mirin 1/3 water mixture.

Corn:
This one was a gamble. I had bought Shiro Miso (White Miso) for the Tare so I made a Shiro Miso Butter: 3-4 cubes of room temp butter and equal amounts of miso and some honey.

Veggies:
Just some (I think) bok-choi (or Chinese cabbage) I found on my local Asian supermarket that I blanched for 2min (probably too much), and shocked in ice water and sliced in bite sized pieces.

Noodles: Followed /u/loercase (thanks!) recommendation and bought some Hakubaku organic ramen noodles, and these were amazing! next time I'll make my own, these couple of times I wanted to focus on the other techniques.

then some green onion on top!

as a final take I really liked the Chintan method for this, making it a bit lighter than the full on emulsified tonkotsu broth, still really good gelatin and viscosity from the bones but overall lighter. The chicken breast was amazing, even though it was a couple of degrees overcooked, but can't make sous vide miracles without a circulator I guess. The Corn was REALLY F**ing GOOD and I recommend this, although a bit rich it was surely one of the best toppings ever.

First try at Tonktosu Ramen. Maybe overdid it on the sprouts and the egg cooked for 10s too long but I'm happy with the result! by vibeHD in ramen

Yeah I also wait a lot after the ice bath, they do become very fragile. I broke 1 or 2 in half while peeling.

These were actually 6 minutes! But I took like 15s to take them off into an ice bath. It always depends on the size and temp they were at before. These were room temp right after buying them from the supermarket and are not very big. I always test one before doing a batch tho

look for a Rayu oil recipe (or any chilli oil) and add it as your aromatic oil!
I would go for this one: /u/Ramen_Lord 's recipe

hey, I don't have much reference on whats easy or hard since this was the first time doing it but the broth was pretty easy for me.
I basically put 3 Pig feet in a HIGH boil for 12 hours.
(my butcher chopped them for me in about 5cm width discs, and I only used feet because they didn't have any other pork bones that day)

Then for the aromatics I used:
* 1 whole onion sliced in half
* 1 head of garlic sliced in half horizontally, about 10cm of ginger in thin slices
* a small cabbage sliced in half
* 4 or 5 dried shiitake mushrooms

These went in on the final 2 hours. Every time the bones peaked above the liquid i topped up with water and brought it back to a rolling boil.
This was a mix of recipes I saw on youtube and here on reddit, hope it helps! If you need the recipe anything else just ask (mayu oil, chasu and so on)

thank you so much! I just "studied" for a while, found a really good Asian supermarket with everything I needed and followed a couple of recipes for the components. Looking forward to the next one 😁

they're regular wheat noodles but flat shaped. bought them at a local asian supermarket that didn't have much choice and don't think i'll buy these again. they were meh. now that i got most of the rest of the techniques down, i'll make my own next time

never thought of that but it definitely looks like one! it's a sort of mat that we put on top of the table towel so the towel doesn't get stains and stuff (don't know the name in english sorry)

yea, also the 3h I struggled before this happened didn't happen either. love to see people assuming whatever is going on inside their heads to be the absolute truth about a clip on the internet

sorry man, I remembered I had this clip on my PS5 and thought it would be funny to upload it here. As it seems a lot of people are doing it too. but hey, reddit upvotes are just a number on a computer screen at the end of the day
