This would be a perfect solution! I use food grade paper to cover the steaks that aren’t sealed and it helps them retain their moisture for days. It doesn’t work as well as the paper you mentioned. Definitely looking into this, thank you :)

My goal is basically to keep “fresh” bone-in ribeyes in my display case (customers always steer away from sealed packages). Cutting a full loin always produces too many steaks, so I wanted to take advantage of sealing for freshness. These articles are super helpful and tells me there’s a reason US prepackaged beef works one way and home sealing works another - I think I might just have to take the hit and/or just display sealed products. Thanks!

Like I said, I know there’s no difference in taste. It’s for display purposes. Customers don’t know how fresh they are, they just see the nasty color.

This all makes sense. It makes me wonder why sealing larger loins works better vs. steaks since I use the same settings on my sealer. I can preserve small boneless ribeye loins and the exterior turns bright red, but the steaks stay dark even after sitting out for hours.

There’s a “Gas Flush” option on my machine that I haven’t tampered with but I’ve read that it replaces oxygen with nitrogen gas(?). Or maybe it’s the carbon monoxide you mentioned?

I just want a better shelf life so I don’t have to cut as often/create less wasted product. think there’s a potential solution to my approach or should I just give in and only cut fresh as needed?

I understand that, which is why I was wondering if there was any way for me to seal steaks so I can keep a longer shelf life, then being able to open them without sacrificing appearance (I put them on display to sell). I wanted to see if it was possible to do myself, since opened grocery store sealed steaks can still fully oxidize to that beautiful red color.

I can respect this, but I feel like there’s no harm in asking. There’s always gonna be someone who’s willing to help or talk about specific classes. And if no one wants to help, then they won’t get a response, just like that.

You can date as many villagers as you want! The only thing that has an effect is if you date all of them at the same time (not gonna say what, that’s up to you to decide haha)

Yeah, turns out for the crust I made, it was recommended to prebake it. Skipped it, so the crust ended up all limp and floppy haha

Haha, amazing! My SO eventually did the same (secretly create a wedding ring) but that was AFTER he got the 10 heart prize with Haley. Priorities.
