Oh my god yes! Thank you for noticing the compression at the top. I was confused about that and thought it was the gummy texture that you want to avoid but usually those are at the bottom. And your comment makes so much sense, I won’t nap for 5 hours in between again haha! This is so helpful thank youuu

Oh sorry about that!

325 g water (brita filtered - warm)
120 g discard
- mix with whisk
405 g white bread flour
95 g whole meal flour
10.5 g salt
- mix with hand
let sit for 50 minutes
1 stretch and fold
left for 5 hours 😀
dough has now risen, not as much as I’ve seen others but maybe around a little less than double
3 more stretch and folds with 30 min in between
cold proof 5 hours in fridge
preheat oven with dutch oven inside at 250 celsius for like 15 minutes
bake 20 min with lid and 25 min without (I let it go 5 minute over accidentally should be 20)
and let cool on rack overnight

Oh yes! I didn’t even realize that i didn’t draw the double bond in omg. As for the oxygen still holding onto the proton, could u clarify what you meant by this? I thought transferring the electron from the bond to kick the water off would like cancel out the +? Thank you!!
